Here’s a simple and delicious recipe for cooking asparagus spears. I made them for my family this Christmas as part of our holiday meal. It was the first time that I had ever prepared them that way and everyone raved about how delicious they were. And even though I made more than enough for our family of nine (my husband commenting that they would never all be eaten), they were gone in no time. Even my youngest son (23), who can be a bit picky about his vegetables, loved them and went back to the buffet table looking for more. Sorry, all gone!
It’s amazing how the simple things in life can bring so much pleasure. Next year, I’m making a double batch!
Broiled Asparagus Spears
Hold each spear and bend it until the stalk breaks. Discard the bottom. (I didn’t do this—I just cut about ½ inch off of the bottom of each spear.)
Rinse and pat dry the asparagus. Then arrange the spears, single layer, on a large cookie sheet.
Drizzle olive oil onto the spears and sprinkle with garlic powder and sea salt.
Cook under broiler for about 10-15 minutes. (I’ve also heard that you can bake it at 450º until crispy & tender).
Serve as is—no butter or other seasonings needed. Yummm!
